This course will provide the student with a general understanding of mathematics application used in a professional food service setting. This course will then introduce the student to the mathematical knowledge needed in the restaurant and hospitality industry. No

SLOs:
Upon successful completion of this course, students will be able to:

  • Apply basic math principles in culinary contexts by accurately performing fundamental mathematical operations, including addition, subtraction, multiplication, division, fractions, and percentages. 
  • Construct and use basic Excel spreadsheets for culinary calculations.
  • Calculate basic food costs and analyze profit margins.
  • Convert recipes accurately based on yield requirement, ensuring consistency in portion size and ingredient ratios.
