This course explores dietary sources, functions, and requirements of major nutrients for all individuals. Course topics include tools for healthy eating, digestion and absorption, the macronutrients, vitamins and minerals, water balance, energy balance, food safety and technology, and nutrition during the life stages.

Recommended and Non-Course Requisites:   or minimum reading and math placement score based on college assessment.
SLOs:
Upon successful completion of this course, students will be able to:

  • Define nutrition terminology correctly.
  • Evaluate the nutritional adequacy of a diet with tools like Dietary Reference Intakes (DRIs), Dietary Guidelines, MyPlate, or Nutrition Facts Panel.
  • Identify the relationship between diet and chronic diseases.
